Zucchini Bread

I decided to use some of the zucchini from my CSA this week to make my Mom’s zucchini bread.  I used two different sized pans, one for us to eat and one to give away to a neighbor.

The recipe is dead simple to put together and the single best zucchini bread you will ever eat!

Mom’s Zucchini Bread

3 Cups Flour

1 tsp. Baking Soda

1/4 tsp. Baking Powder

2 Cups Sugar

1 tsp. Vanilla

1 1/2 tsp. Ground Cinnamon

1 tsp. Salt

3 Eggs

1 Cup Oil

2 Cups Grated Zucchini

Combine all ingredients well.   Pour into 2 greased and floured loaf pans.  Bake at 350 degrees for one hour.  Cool 10 minutes and flip out onto wire racks to cool completely.
