Well summer is in full swing! This week my share included:
Cucumbers – I never did get a chance to make the cold cucumber soup for lunch, so that is what I intend on making for lunch on Monday
Eggplant – I am totally in the mood for eggplant parm!
Jalapeno – I finally have enough to make one batch of Bread and Butter Pickled Jalapeno’s!
Kale – The raw kale salad I made last week was so good I am going to make it again
Rainbow Chard – Is it just me or does every food blog have a post about Fried Chicken lately??? I think I will try my hand at Fried Chicken with Mashed Potatoes and Sautéed Greens
Summer Squash – I have so much zucchini and squash this week, my neighbors have been leaving zucchini on our door step! So I am going to shred this summer squash and put it in the freezer for use later
Green Peppers – These will either be used to make Sausage and Pepper Sandwiches or Pepper Steak on Sunday
Cabbage – I have two small heads of cabbage now, one from last week, one from this week so I think I will make homemade sauerkraut, fall is coming!
Red Beets – Roasting them again and will eat them with the Raw Kale Salad
Sunflowers – They just look so pretty in a vase on my table
Cherry Tomatoes – These didn’t make it home, I ate them in the car, hence, why they are not in the picture!
roasted beets really freeze well also. If I have too many, I freeze them and then enjoy in salads for a few months.
