For dinner on Saturday night, I wanted to have just a little sweet something to finish the meal. I found a recipe, years ago, in one of my favorite cookbooks Treasured Family Recipes from the Blooming Glen Mennonite Church. The book has so many wonderful recipes that I make again and again. This one is on page 240 and it actually called Cheesecake Cookies but for some weird reason, we call them cheesecake squares in our house, go figure!
The recipe couldn’t be simpler, you make a crust, pat half of it in the bottom of the pan and bake that for 15 minutes. You make the cheesecake filling, flavored with a hint of lemon, and pour that over your crust and sprinkle the remaining crust on top. It gets baked for an additional 25 minutes.
I love that I can have the flavor of cheesecake without all of the fuss!
