I am so grateful that my friend J is Greek! I texted her the week before Easter to ask if she and the kids eat lamb…..I received an immediate text back that read “we’re Greek, of course we eat lamb!”. I was so excited, the hubby and I love to eat lamb and Easter is the perfect time of year for lamb.
I kept it simple, I purchased rack of lamb and made my own marinade of parsley, lemon zest, rosemary, garlic, Dijon mustard, salt, pepper, and olive oil. I covered the lamb with the marinade and let it sit in the fridge for two hours.
While that was hanging out in the fridge, I had the girls peel some potatoes, we used the food processor to grate some Gruyère cheese and evenly slice the potatoes. We made a simple potato and cheese gratin and slide that into the oven.
Once the potatoes had been cooking for an hour, we stared the grill and grilled up the lamb chops.
We rounded out the meal with grilled asparagus and homemade buttermilk bread. It was a lovely meal, not too heavy for the middle of the day but just rich enough for a holiday!
It was a beautiful day and we were so grateful to have such wonderful friends share Easter dinner with us!
