I LOVE tomatoes and I especially love a really good tomato salad in the summer. A friend of mine shared with me her super simple, delicious, recipe a few years ago and it has been my go to tomato salad ever since. It isn’t really a recipe, just a list of ingredients and you taste as you go but oh my, it is the best thing you will ever eat!
Salt and Pepper
Large dice the tomatoes, mince the garlic, chiffonade the basil and mint. You will only need a leaf or two of mint, just a small hint is all you want or need in this recipe. It is the flavor in the background that you can’t identify but totally miss if it isn’t there. You want to season the tomatoes really well with salt and pepper, add the garlic and herbs. Toss that with your fingers until combined and drizzle olive oil into the bowl. You just want to lightly dress the tomatoes. Now here is the big secret, you must make this at least an hour before you want to serve it to allow the flavors to fully develop.
In the unlikely event that you have any left over, it makes a great, quick, raw pasta sauce the next day. Enjoy!
