Honestly, the only meatless dinner that my husband has ever requested a second time was the vegetable pasta dish I made on Good Friday of this year. It was such a simple, easy dinner to put on the table and I was glad to make it again. This time, I used vegetables from the garden, whoo hoo! Nothing fancy, just peppers, tomatoes, and zucchini from the garden with some garlic and onions for good measure.
I decided to make my life easy and put everything in an aluminum pan, toss it with olive oil, salt and pepper, cover with foil and place on the grill for 30 minutes. Everything came out perfectly cooked and the tomatoes added a lot of “sauce” to the party.
I added the veggies to a pound of cooked pasta, half a cup of pasta water, and a generous amount of parmesan cheese. While I was tossing the pasta dish together, the hubby grilled up some italian sausage to go alongside the main course.
It truly was a no fuss dinner, and clean up was a snap, the only pot was the one I cooked the pasta in!
