Seeking a Warm Bowl of Comfort

I made a big batch of soup on Friday afternoon, I really needed a warm, comforting meal to soothe my soul.  We have had a very trying week in my family and I find I just don’t have an appetite or interest in food right now.   I know I need to eat, it is just too early for that, but I find soup is something I can always just eat a little of, whatever is going on around me.

I kept it simple, I just can’t focus on anything complicated right now.  It is a simple vegetable soup with beans.  I loaded the soup with onions, carrots, fennel, tomatoes, garlic, leeks, and celery.  All the good stuff one needs to face the day.  I used chicken stock, because it was what I had on hand, but it would be equally delicious with vegetable stock.
