It has been so darn cold here lately and I have been craving soup. I pulled out quite a few cookbooks on Sunday morning and made a list of the recipes that interested me. When the hubby came home from the gym, I let him pick. He chose tomato bisque.
It is really a simple recipe, that only takes about 40 minutes, start to finish to cook. It is definitely something you could have on the table on a weeknight.
3 28oz Cans Whole Tomatoes, Hand Crushed
2 Onions, Large Dice
6 Cloves Garlic, Roughly Chopped
1 Stick Butter
Handful of Fresh Basil Leaves
Melt the butter in a medium sauce pan and add the onions, seasoned with salt and pepper to taste. Once the onions soften slightly, add the garlic and cook for one minute. Add the three cans of tomatoes, with the juice. Bring to a boil, turn down to a simmer and cook for 30 minutes. Add basil leaves and using a hand-held blender, puree soup until smooth. Taste, adjust salt and pepper, serve.
The hubby likes his soup with a bit of rice in it, I prefer mine with a splash of cream – I kept both of those items on the side, that way we could both fix our dish to our liking.
I added grilled ham and cheese sandwiches to the plate and called it dinner. It was exactly what I needed, a warm bowl of soup and a gooey grilled cheese sandwich. Nothing like a nice helping of comfort food to start the week out right!
