I really do like to cook for myself when the hubby is traveling, I will be honest, I don’t cook every night, but most nights, I enjoy putting together a meal for myself. It allows me to cook dishes that I truly enjoy and the hubby would prefer not to eat.
I am a big fan of vegetarian food. I like having meals with out meat on occasion, the hubby, not so much, so a vegetarian pasta dish is a perfect meal for one when he is traveling.
I had a yellow pepper in the fridge, so I diced that along with some onion and garlic. I added a handful of capers and a can of diced tomatoes. Once the pasta was done, I added it to the pan and topped the whole thing with some freshly grated parmesan cheese. It was delicious and made just enough for me to have for dinner and lunch the next day. Not too bad for a quick meal after a long day at work!
