Caprese Sandwich

I wanted a fresh, summery sandwich for lunch on Sunday.  I had a few tomatoes lingering on my counter so when I stopped at the grocery store, I picked up a nice crusty roll, some soft, creamy mozzarella cheese, and a container of pesto.

The sandwich came together in no time flat.  Slice up the tomatoes and cheese, spread the pesto on the top and bottom of the roll, then a nice generous sprinkle of black pepper.   It was good, but I can’t wait for tomatoes to be in season, once tomato season is in full swing, I will be making this sandwich every single week.  For now, hot-house tomatoes will have to do, thank goodness summer is almost here!
