I wanted to use up the rest of the mac and cheese from the other night and I was lucky enough to find two really, thick, beautiful pork chops in the butcher case. I kept it really simple, just seasoned them with Penzey’s Pork Chop Seasoning and slapped them on the grill. I heated up the mac and cheese in a pan on the stove, adding a bit more heavy cream to loosen the cheese sauce, and steamed up a few baby carrots that were hanging out in my crisper drawer.
It was a really easy meal to put together, it tasted fantastic, and it used up the rest of the mac and cheese as well as the carrots in the fridge. We ended up with no leftovers, which was perfect, because the hubby was traveling for the rest of the week and I was working late almost every night of the week. Gotta love it when a plan comes together.
