I worked a ton of hours this past weekend and I truly wasn’t in the mood to make dinner on Saturday night. I got the brilliant idea to stop by the deli near where I work and pick up a pound of their house made corned beef and some rye bread. I figured corn beef sandwiches would be the perfect thing to serve after working 26 hours in two days….
I completely blanked on the date, for goodness sakes, I work for a college, heck, there are four colleges within walking distance of mine and yet, I forgot….this past weekend there were buses of college kids doing bar crawls in honor of St. Patrick’s day. The buses were smart enough to stop off at the deli and let the kids pick up some corn beef specials for the road. The line at the deli was out the door and halfway down the block. Ah well….a stop at the grocery store was in my future.
Since I couldn’t have an easy dinner, I wanted a comforting one, especially since I had to be back at work by 6am the next day AND we had daylight savings time. Chicken breasts, on the bone, with mashed potatoes, gravy, and roasted asparagus fit the bill nicely.
The picture doesn’t do the meal justice, but honestly I was so hungry I was rushing the picture. It was just what the doctor ordered!
