Monday night I needed something quick for dinner, the hubby had an appointment that he couldn’t miss. Thankfully I had tons of chicken left over from dinner on Saturday. I pulled it from the bone, diced it and added celery, carrots, and onions. A little salt, pepper, and mayo, and BOOM, dinner in a flash.
We had some ciabatta bread left over from dinner on Saturday as well, I sliced and toasted the bread and piled on the chicken salad.
I added a tossed green salad on the side and we quickly ate. Great way to use up leftovers and put a nice dinner on the table, double win!
