Pork Tenderloin

Is always a favorite at our house and I love making it for dinner.   I didn’t have to go into the office the day after Thanksgiving, thank goodness, but I did have quite a bit of work to do from home.  No worries, I would rather read reports at home at my dining room table than battle Black Friday traffic into Philly!

I roasted some potatoes in the oven along with the pork and steamed some frozen corn to go alongside.  The plate was a bit monochromatic, but it tasted delicious, and that, truly, is all that counts!  After reading the reports, I did do a little online shopping, but I stayed far, far, away from the stores.  I liked being at home, in my comfy clothes, sipping on a very large cup of tea.  I couldn’t have asked for a better weekend.
