Pickled Beets

I am not sure how many of you are fans of beets, let alone pickled beets but in the area we live they are a huge deal!!  I posted on my facebook page Sunday that I had just finished putting up 25 lbs of pickled beets.  I had several requests for jars, on the spot!  Too bad they have to sit for two weeks before opening so they can develop their flavors fully.

If you have read any of my other posts you know that my husband HATES beets and most pickled items.  We, as a family, didn’t do our due diligence with him….how can he hate all the things our family loves…..pickles, beets, cucumbers, tomatoes, paprika…..the list goes on and on.  My excuse is that I was young and in love, not sure about the rest of the family.   Now I am older but no less in love with him so I am willing to look past his food issues. My feeling is, more for me!

Thank goodness I have lots of friends and neighbors who love pickled beets.  My friend Cat, of Restoring Life Blog and Declutter Cat Blog has a husband who is a giant fan of anything pickled.   I called her Sunday morning to ask if her honey would like the rest of my pickled beet brine to make pickled eggs with.  She gave me a resounding YES! I love that Cat is open to random and completely off the wall calls from me, especially on a Sunday morning….one of the many reasons I am glad to call her a friend.

Oh – random picture of the broken jars from canning this morning.  It was a new batch of jars, I washed them, sterilized them and packed them same as always but when I lifted the lid on the water bath, two jars were floating.  It seems the bottoms broke off, leaving me with a lovely mess in the pot!  Good thing I had many more beets to can… I don’t think we will miss two jars. I cleaned up the pot, and started over again.  Nothing like waiting for water to boil ….. again….

I didn’t let that get me down.  Since I had brine left, I pickled a few eggs for myself, they should be ready to eat in about a week.  I can’t wait!  I had two jars but one of my neighbors stopped by to drop off an empty jam jar and I gave her a jar.  She was so happy.

  1. Oddly enough, I am reading this blog while I wait for water to boil…again. It’s a canning morning 🙂 But we are a family of pickled beet eating maniacs – even my kids (3yr and 1yr) devour them up. I think it makes all the difference when you have a good recipe; which sounds like you do. I can’t wait til mine are ready to be picked!

  2. I worked with an awesome client this weekend who LOVED hearing just my end of your random phone call 🙂 And I have to say the last pic has such awesome color contrast that it kind of looks like you’re pickling eyeballs! haha

    • Pickling eyeballs, awesome!! Sorry, I should have texted you but I was hoping for an immediate answer as I was trying to clean up the kitichen to start making jam. My fault, glad your client was ok with it!
